Baked Chicken with Feta and Spinach

Chicken cutlets, rinse and pat dry
1/4 cup of crumbled feta
1 package of frozen chopped spinach, thawed and squeezed dry
1 cup of sour cream
2 tablespoons minced garlic.
bacon slices, uncooked

Mix feta, thawed spinach, sour cream, and minced garlic. Put a generous amount in the center of a cutlet, and roll the chicken up, and wrap with a piece of bacon. Secure with a toothpick, and repeat until all chicken cutlets are done. Bake at
350* until the chicken no longer pink, about 30 minutes.

Turkey Chili

1 1/2 pounds ground turkey
1 8 oz can of tomato sauce
1 10 oz can of mild rotel
1 package of mild chili seasoning
8 oz trinity mix (onion, bell pepper, celery diced)

Cook all in a slow cooker (crockpot) on low for 6-8 hours. Serve with cheddar cheese, sour cream, saltines, etc.

Crab Meat Pie

3 eggs

1 cup of grated sharp cheese

1 can (6.5 oz) crabmeat, drained

1 cup (8 oz) sour cream

1 small can of fried onions

1 teaspoon onion salt

In large bowl, beat eggs lightly with a fork.

Add remaining ingredients and stir to combine and break up crab meat.

Pour into *****prebaked deep dish pie shell

Bake at 350 degrers for 30 minutes.

Check with toothpick...done when it comes out clean !

Chicken Caesar Pasta Salad

1 lb boneless, skinless chicken breasts
1 1/2 cups Caesar dressing
3 cups chopped Romaine lettuce
2 cups ziti, cooked, drained, rinsed
Parmesan cheese


Marinate the chicken in 1/2 cup of Caesar dressing and bake at 350 about 20 minutes, or until no longer pink.
Cook ziti according to package directions, drain and rinse. Set aside.
Chop the chicken into bite size pieces and mix with the pasta. Add romaine lettuce and dressing and mix well. Sprinkle with Parmesan cheese.
Serve warm or cold.
Goes well with Tomato Crab Bisque.

The Best Pancakes EVER!

1 large egg
1/2 teaspoon vanilla extract
1/4 cup sugar
1 cup milk
1 1/4 cup all purpose flour
2 tsp baking powder
1/2 tsp salt

Mix all ingredients together until still somewhat lumpy. The greatest part of these pancakes is in the cooking. They require NO buttering/greasing of the griddle.

can add berries, bananas, nuts, chocolate chips as desired!

Sweet Vanilla Butter Cookies

2 sticks of butter, room temperature and cubed
1 1/2 cups confectioners sugar
2 1/2 cups flour
1 large egg
1 1/2 tablespoon vanilla extract
1 tablespoon salt

Combine the salt and flour in a medium mixing bowl and sent aside.

Combine the butter and sugar until light and fluffy.

Add the egg and vanilla.

Slowly add the flour and salt mixture, mixing thoroughly.

Cook at 350* for 9-11 minutes. (works best with a cookie press!)

Dixie Burgers

1 lb ground beef
1 lb ground sausage
1 packet of onion soup mix
2 tablespoons Worchestchire sauce

Mix all ingredients together until well blended. Shape into 8 patties and grill until desired tenderness.

Pimento Goat Cheese

11 ounces of goat cheese, softened
4 ounces sharp cheddar cheese, grated
1 tbs sweet relish
1/2 tsp Tabasco
1 small jar of pimentos, drained

Mix all ingredients together with wooden spoon until well blended. Serve with pita chips or sturdy crackers. Keeps for 3 days.
